Hybrid stats

For ζ = F_n, F_s and [F_n - F_s], we plan (to be able) to take

• the totals: ∑ ζ, ∑ ζ dV and ∑ ζ dm.
• maximum and minimum with grid locations
• ∑ ζ² (primarily for ζ = [F_n - F_s])

And we want stats for fields we aren't overwriting, e.g. we'd like to measure how successful locking for ρ is when we aren't overwriting ρ.
